1 Heat oven to 200C, 400F, Gas Mark 6. Roll out pastry thinly. Cut in rounds using a 7.5 cm (3 inch) cutter and line 12 patty tins.
2 Put a little jam or lemon curd in each, do not over fill. Bake for about 15 minutes.
3 If liked, fill with a little extra jam or lemon curd when cooked.
